Our Taste of Home: Chicken Curry and Rice

One of my favorite home cooked meals to make for myself and my family would be chicken curry and vegetables with rice. I enjoy making this because it is a dish that I know my family loves and it doesn’t require too much prep work.
Ingredients are listed as follows:
▪ 1-2 lbs. Chicken breast or thighs
▪ Two handfuls of Carrots
▪ Two handfuls of Potatoes
▪ Half an onion
▪ 3 table spoons Minced garlic
▪ 1 or two tomatoes
▪ 1 can Coconut cream
▪ Curry seasoning and spices
▪ Olive oil
▪ 1-2 cups of Calrose rice
Preparation Instructions:
▪ Season chicken with salt and pepper
▪ Heat a pot of olive oil for a minute before adding in your chopped onion and minced garlic
▪ Add in the sliced and diced chicken along with the sliced tomato
▪ Mix ingredients in pot and let simmer on medium for five minutes
▪ Add curry seasoning(s) of your choice and to your liking
▪ Add 1 can of coconut cream along with carrots and potatoes and give food a nice mix in the pot
▪ Cover and let simmer on medium for 30 minutes, mixing ingredients every ten minutes or so, so that food is cooked evenly.
The flavors and aroma of this meal are nostalgic for me because it is a dish all of the women in my family have made from my aunt to mother to grandmother. I love being able to draw back to a quick meal that is familiar to me and reminds me of my loved ones.
